I've used both Rails Machine and Slicehost and they
have both given good service. Big difference in price
though.

Although Andrew is right to say Slicehost expect you
to do more work, they do have excellent introductory
articles at articles.slicehost.com covering a bunch of
stuff (inc. Rails).

They also have a nice interface for rebooting and
reinstalling your server, and a good choice of distros
to install (UBuntu 6.06, 7.04, 7.10, Gentoo, CentOS
Debian, Arch). 

It's all been a big help for me in learning about how
to do server admin from scratch. With Rails Machine I
was up and running faster, but Slicehost is a great
learning environment.
