+1 for Railscasts.

Also, the "Agile Web Development With Rails" book from Pragmatic Programmers has been kept up-to-date and is still the standard "go-to" reference for learners I think.

I also can't sing the praises of Ruby Koans enough to get an understanding of Ruby away from Rails. Brilliant, brilliant concept: http://rubykoans.com/
