PragProg's Agile Web Development in Rails is a great book for beginners with a little experience in another language, taking you step-by-step through the process of creating an online store.

Necessarily, it doesn't dig deeply into a lot of the rails "magic" - for that, I'd recommend the Rails 3 Way. If you're switching from something like Python/Django, I'd start with the latter.

Also, the Hartl Rails Tutorial is ok, but I found it a little dry. It's also obsessive about TDD, which may not be helpful for a complete novice.
