Jon Leighton's Poltergeist (https://github.com/jonleighton/poltergeist), a PhantomJS driver for Capybara, works very well for acceptance tests that rely on JavaScript. I've found it rock-solid for almost everything.

As Murray says, though, it's probably the Rails app that's being slow, rather than Cucumber or the Capybara driver.
